Colorado Gastro-Diner + Wine Night

"I got a lot of inspiration for this menu from my culinary experiences in Colorado. I love camping outdoors and cooking over an open flame.  I like to cook things that are sweet, smoky and spicy all in the same bite.  I tried to incorporate as many rustic elements from the food of my childhood - spending my summers on my aunt and uncle's ranch - while also giving the menu the refinement and fine dining feel I picked up while cooking in San Diego, San Francisco, and now Seattle."
